I took Paula Deen’s classic gooey butter cake and gave it a little Southern Valentine twist using a red velvet cake mix. What came out of my oven might be the prettiest, easiest, most crowd-pleasing February dessert ever to grace a dessert plate.

Ingredients
Bottom Layer:
1 box red velvet cake mix
1/2 cup (1 stick) butter, melted
1 egg
Gooey Cream Cheese Layer:
8 oz cream cheese, softened
2 eggs
1 teaspoon vanilla extract
1/2 cup butter, melted
3 to 4 cups powdered sugar (depending on how sweet you want them)
How to Make Red Velvet Gooey Butter Cake Bars
Step 1: Preheat & Prep
Preheat your oven to 350°F.
Lightly grease a 9×13 baking dish.
Step 2: Make the Red Velvet Base
In a bowl, combine:
Red velvet cake mix
1 egg
1/2 cup melted butter
Mix until combined. The dough will be thick.
Press evenly into the bottom of your prepared baking dish.
Step 3: Make the Gooey Layer
In another bowl, beat:
Softened cream cheese
2 eggs
Vanilla
1/2 cup melted butter
Once smooth, slowly mix in powdered sugar until fully incorporated.
Pour over the red velvet base and spread evenly.
Step 4: Bake
Bake for 40–45 minutes.
The edges should be set, but the center should still be slightly soft and gooey. Don’t overbake — that gooey middle is what makes this cake famous.
Let cool completely before cutting into squares.
